We've set up our brewery in the middle of the Charolais bocage, in an old stone farmhouse.
Surrounded by fruit trees, our corner of paradise is in Ciry-le-Noble in Saône-et-Loire (71), in southern Burgundy.
Our geographical position between the Creusot-Montceau coalfield and the Charolais-Brionnais region gives us access to both rural and urban areas.
To create our beers, we carefully select 4 essential ingredients: water, malt, hops and yeast.

To create our beers, we carefully select 4 essential ingredients: water, malt, hops and yeast.
The main ingredient in our beers is filtered water balanced with mineral salts, depending on the style of each beer.
We pay particular attention to the quality of the water we use, as it plays an essential role in the taste and characteristics of our different beers. By filtering it and balancing its mineral salts, we ensure that we create the perfect base for each type of beer we brew.
Our malts come from cereals grown and malted in France and are organically produced, in collaboration with two trusted suppliers:
- A Vos Malts (26), who supply us with Burgundy barley;
- La Malterie des Volcans in Puy-de-Dôme (63).
These two companies are committed to producing high-quality malt. Thanks to their know-how, French malt offers unique aromas and flavours. By choosing these suppliers, we guarantee a top-quality beer, made with local ingredients and grown with respect for the environment.
Supporting French agriculture is an important choice for us.
Our hops, an essential ingredient in the production of our beer, are organically grown in France.
We have chosen two hop farms, Cours Cocotte in the Puy-de-Dôme département (63) and Houblons du Moulin in the Ain département (01), which grow, harvest and distribute this aromatic, bittering plant directly to us.
The French organic hop sector is in full development and we have chosen to support it.
For the yeast, we mainly use Kveik. These are farm yeasts of Norwegian origin and are known for their ability to ferment at high temperatures, making them ideal for brewing in warmer conditions.
Their use dates back several centuries, and the tradition of passing them from hand to hand is testament to their cultural importance and central role in beer production.
Thanks to these farmhouse yeasts, we create authentic, delicious beers, perpetuating an age-old tradition.
